Ingredients
• 12 oz (340g) fettuccine pasta
• 1 lb (454g) boneless, skinless chicken breasts, cut into 1-inch cubes
• 3 cups (240g) broccoli florets
• 2 tbsp (30ml) olive oil
• 3 cloves garlic, minced
• 2 cups (480ml) heavy cream
• 1 cup (100g) grated Parmesan cheese
• 1/2 tsp (2.5ml) salt
• 1/4 tsp (1.25ml) black pepper
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to the package instructions until al dente. Drain the pasta and set it aside.
- Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the cubed chicken and sauté until golden brown and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set it aside.
- Cook the Broccoli: In the same skillet, add the broccoli florets and sauté for 4-5 minutes, until they’re crisp-tender. Remove the broccoli from the skillet and set it aside.
- Make the Alfredo Sauce: In the same skillet, reduce the heat to medium and add the minced garlic. Cook for 1 minute, stirring constantly, until fragrant. Pour in the heavy cream and bring the mixture to a simmer. Whisk in the Parmesan cheese, salt, and black pepper. Cook for 2-3 minutes, stirring frequently, until the sauce thickens slightly.
- Combine the Dish: Add the cooked fettuccine, chicken, and broccoli to the Alfredo sauce. Gently toss the ingredients together until they’re evenly coated and heated through, about 2-3 minutes.
