Chicken Caesar Pasta Salad

Ingredients

• 1 pound (454g) rotisserie chicken, shredded or diced
• 1 pound (454g) penne or farfalle pasta, cooked al dente
• 2 cups (60g) chopped romaine lettuce
• 1 cup (150g) cherry tomatoes, halved
• 1/2 cup (50g) shredded Parmesan cheese
• 1/2 cup (75g) croutons
• 1 cup (240ml) creamy Caesar salad dressing
• 2 tablespoons (30ml) fresh lemon juice
• 1 teaspoon (5ml) Dijon mustard
• Salt and freshly ground black pepper, to taste


Instructions

• Step 1: Cook the pasta according to package instructions until al dente. Drain and rinse with cold water to stop the cooking process.
• Step 2: In a large mixing bowl, combine the cooked pasta, shredded chicken, chopped romaine lettuce, halved cherry tomatoes, shredded Parmesan cheese, and croutons.
• Step 3: In a small bowl, whisk together the Caesar dressing, lemon juice, and Dijon mustard. Season with salt and pepper to taste.
• Step 4: Pour the dressing over the pasta salad and toss gently to coat all the ingredients evenly.
• Step 5: Refrigerate the Chicken Caesar Pasta Salad for at least 30 minutes to allow the flavors to meld together before serving.
