Instructions
• Step 1: Preheat your oven to 400°F (200°C). Season the chicken breasts with salt and pepper.
• Step 2: In a large, oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken and sear for 3-4 minutes per side, or until golden brown.
• Step 3: Transfer the skillet to the preheated oven and bake the chicken for 15-20 minutes, or until it reaches an internal temperature of 165°F (75°C).
• Step 4: Remove the chicken from the oven and top each piece with sliced mozzarella cheese and halved cherry tomatoes.
• Step 5: Return the skillet to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
• Step 6: In a small bowl, whisk together the balsamic vinegar, minced garlic, and chopped basil. Drizzle the dressing over the Chicken Caprese and serve immediately.
