• 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
• 2 tablespoons ghee
• 1 onion, finely chopped
• 3 cloves garlic, minced
• 1 tablespoon ginger, grated
• 2 teaspoons Kashmiri red chili powder
• 1 teaspoon coriander powder
• 1 teaspoon cumin powder
• 1 teaspoon garam masala
• 1 cup plain yogurt
• Salt to taste
• Chopped cilantro for garnish
Instructions
• Step 1: In a large skillet or wok, heat the ghee over medium-high heat. Add the chopped onion and sauté until translucent, about 5 minutes.
• Step 2: Add the minced garlic and grated ginger to the pan and cook for an additional 2 minutes, stirring constantly to prevent burning.
• Step 3: Add the chicken pieces to the pan and sear them on all sides until lightly browned, about 5-7 minutes.
• Step 4: Stir in the Kashmiri red chili powder, coriander powder, cumin powder, and garam masala. Mix well to coat the chicken evenly with the spices.
• Step 5: Pour in the plain yogurt and season with salt to taste. Stir to combine, and let the mixture simmer for 15-20 minutes, or until the chicken is cooked through and the sauce has thickened.
• Step 6: Garnish the Chicken Ghee Roast with chopped cilantro and serve hot.
