Ingredients
• 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
• 2 tablespoons ghee
• 1 onion, finely chopped
• 4 cloves garlic, minced
• 1 teaspoon ginger paste
• 1 teaspoon coriander powder
• 1 teaspoon cumin powder
• 1 teaspoon chili powder
• 1 teaspoon garam masala
• 1 teaspoon salt, or to taste
• 2 tablespoons water
• Chopped cilantro for garnish (optional)
Instructions
• Step 1: In a large skillet, heat the ghee over medium-high heat. Add the chopped onions and sauté until they are translucent, about 3-5 minutes.
• Step 2: Add the minced garlic and ginger paste to the skillet and sauté for an additional 1-2 minutes, until fragrant.
• Step 3: Add the chicken pieces to the skillet and cook for 5-7 minutes, stirring occasionally, until the chicken is partially cooked and lightly browned.
• Step 4: Stir in the coriander powder, cumin powder, chili powder, garam masala, and salt. Mix well to coat the chicken evenly with the spices.
• Step 5: Add the 2 tablespoons of water to the skillet and stir to combine. Reduce the heat to medium-low and let the chicken simmer for 15-20 minutes, or until the chicken is cooked through and the sauce has thickened.
• Step 6: Once the chicken is cooked, taste and adjust the seasoning if necessary. Garnish with chopped cilantro (if using) and serve hot.
