• 1 lb boneless, skinless chicken breasts, cubed

Instructions
- Prepare the Ingredients: Begin by gathering all your ingredients and prepping them. Cube the chicken breasts, dice the onion, mince the garlic, slice the carrots and celery, and measure out the remaining ingredients.
- Sauté the Aromatics: In a large pot or Dutch oven, heat a tablespoon of oil over medium heat. Add the diced onion and sauté for 2-3 minutes, until translucent. Then, add the minced garlic and sauté for an additional minute, being careful not to let the garlic burn.
- Brown the Chicken: Add the cubed chicken to the pot and cook, stirring occasionally, until the chicken is lightly browned on all sides, about 5-7 minutes.
