Hearty and Flavorful Chicken Gnocchi Soup

Ingredients

• 1 lb boneless, skinless chicken breasts, cubed
• 1 package (16 oz) potato gnocchi
• 4 cups chicken broth
• 2 cups heavy cream
• 1 onion, diced
• 3 cloves garlic, minced
• 2 carrots, peeled and sliced
• 2 stalks celery, sliced
• 2 tsp dried thyme
• 1 tsp salt
• 1/2 tsp black pepper


Instructions

  1. Prepare the Ingredients: Begin by gathering all your ingredients and prepping them. Cube the chicken breasts, dice the onion, mince the garlic, slice the carrots and celery, and measure out the remaining ingredients.
  2. Sauté the Aromatics: In a large pot or Dutch oven, heat a tablespoon of oil over medium heat. Add the diced onion and sauté for 2-3 minutes, until translucent. Then, add the minced garlic and sauté for an additional minute, being careful not to let the garlic burn.
  3. Brown the Chicken: Add the cubed chicken to the pot and cook, stirring occasionally, until the chicken is lightly browned on all sides, about 5-7 minutes.
  4. Create the Broth: Pour in the chicken broth and add the sliced carrots, celery, and dried thyme. Bring the mixture to a boil, then reduce the heat and let it simmer for 10-15 minutes, or until the vegetables are tender.
  5. Incorporate the Gnocchi: Add the potato gnocchi to the pot and continue simmering for an additional 5-7 minutes, or until the gnocchi are cooked through and float to the surface.
  6. Finish with Cream: Stir in the heavy cream and season with salt and pepper to taste. Allow the  soup to simmer for 2-3 minutes, just until the cream is heated through.
  7. Serve and Enjoy: Ladle the Chicken Gnocchi Soup into bowls and serve hot, garnished with fresh herbs or a sprinkle of Parmesan cheese, if desired.
