Ingredients
• 1 lb. boneless, skinless chicken breasts, cut into 1-inch cubes
• 1 red bell pepper, cut into 1-inch pieces
• 1 yellow bell pepper, cut into 1-inch pieces
• 1 red onion, cut into 1-inch pieces
• 8 oz. cremini mushrooms, halved
• 1/4 cup olive oil
• 3 cloves garlic, minced
• 2 tbsp. fresh lemon juice
• 1 tsp. dried oregano
• 1/2 tsp. salt
• 1/4 tsp. black pepper
Instructions
• Step 1: In a large bowl, whisk together the olive oil, garlic, lemon juice, oregano, salt, and pepper. Add the chicken, bell peppers, onion, and mushrooms, and toss to coat evenly. Cover and marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
• Step 2: Preheat your grill to medium-high heat (about 400°F). Thread the marinated chicken and vegetables onto metal or wooden skewers, dividing them evenly.
• Step 3: Grill the kebabs for 12-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender-crisp.
• Step 4: Remove the kebabs from the grill and serve immediately, garnished with fresh herbs if desired.
