Hearty Chicken Nachos Recipe

Ingredients

• 1 lb boneless, skinless chicken breasts
• 1 tbsp olive oil
• 2 tsp chili powder
• 1 tsp cumin
• 1 tsp garlic powder
• 1 tsp onion powder
• 1 tsp smoked paprika
• 1/2 tsp chipotle chili powder
• 1 lime, juiced
• 1 (12 oz) bag tortilla chips
• 2 cups shredded cheddar cheese
• 2 cups shredded monterey jack cheese
• 1 cup salsa
• 1 cup sour cream
• 1/4 cup chopped fresh cilantro


Instructions

  1. Marinate the Chicken: In a large bowl, combine the chicken, olive oil, chili powder, cumin, garlic powder, onion powder, smoked paprika, chipotle chili powder, and lime juice. Cover and refrigerate for at least 30 minutes, or up to 4 hours for maximum flavor.
  2. Cook the Chicken: Preheat your oven to 375°F (190°C). Place the marinated chicken on a baking sheet and roast for 25-30 minutes, or until the internal temperature reaches 165°F (75°C). Allow the chicken to rest for 5 minutes, then shred it using two forks.
  3. Assemble the Nachos: Spread the tortilla chips out on a large baking sheet or oven-safe platter. Top the chips evenly with the shredded chicken, followed by the shredded cheddar and monterey jack cheeses.
  4. Bake the Nachos: Place the nachos in the preheated oven and bake for 10-12 minutes, or until the cheese is melted and bubbly.
  5. Finish and Serve: Remove the nachos from the oven and top with the salsa, sour cream, and chopped cilantro. Serve immediately, while the cheese is still hot and melty.
