Ingredients
• 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
• 8 ounces wide rice noodles
• 2 tablespoons vegetable oil
• 3 cloves garlic, minced
• 1 inch fresh ginger, peeled and grated
• 1 large red bell pepper, sliced into thin strips
• 1 cup sliced mushrooms
• 2 cups broccoli florets
• 2 tablespoons low-sodium soy sauce
• 1 tablespoon rice vinegar
• 1 teaspoon sesame oil
• Salt and freshly ground black pepper, to taste
Instructions
• Step 1: Prepare the rice noodles according to package instructions. Drain and set aside.
• Step 2: Heat the vegetable oil in a large skillet or wok over high heat. Add the chicken and cook, stirring occasionally, until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
• Step 3: In the same skillet, add the garlic and ginger. Cook for 1 minute, stirring constantly, until fragrant.
• Step 4: Add the bell pepper, mushrooms, and broccoli to the skillet. Stir-fry the vegetables for 3-5 minutes, until they are crisp-tender.
• Step 5: Return the cooked chicken to the skillet and add the cooked rice noodles, soy sauce, rice vinegar, and sesame oil. Toss everything together until well combined and heated through, about 2-3 minutes.
• Step 6: Season with salt and pepper to taste. Serve hot, garnished with additional chopped scallions or sesame seeds, if desired.
