Ingredients

• 1 tablespoon olive oil
• 1 large onion, diced
• 3 cloves garlic, minced
• 1 tablespoon grated fresh ginger
• 2 teaspoons ground cumin
• 2 teaspoons ground coriander
• 1 teaspoon ground turmeric
• 1 teaspoon ground chili powder (or to taste)
• 1 (15-ounce) can chickpeas, drained and rinsed
• 3 medium potatoes, peeled and cubed
• 1 (14-ounce) can diced tomatoes
• 1 cup vegetable broth
• 1 teaspoon salt, or to taste
• 1/4 cup chopped fresh cilantro, for garnish


Instructions

  1. Heat the Oil: In a large skillet or Dutch oven, heat the olive oil over medium heat. This will create a foundation for the aromatic flavors to bloom.
  2. Sauté the Aromatics: Add the diced onion to the hot oil and sauté for 3-4 minutes, or until the onion is translucent and fragrant. Next, stir in the minced garlic and grated ginger. Allowing the garlic and ginger to cook for 1-2 minutes will help release their maximum flavor potential.
  3. Bloom the Spices: Add the ground cumin, coriander, turmeric, and chili powder to the pan. Stir the spices constantly for about 1 minute to toast them and release their essential oils, which will enhance the overall depth of flavor in the dish.
  4. Add the Chickpeas and Potatoes: Pour in the drained and rinsed chickpeas, followed by the cubed potatoes. Gently stir to coat the chickpeas and potatoes with the spice mixture.
  5. Simmer to Perfection: Add the diced tomatoes and vegetable broth to the pan. Bring the mixture to a gentle simmer, then reduce the heat to medium-low. Cover the pan and let the curry simmer for 20-25 minutes, or until the potatoes are tender when pierced with a fork.
  6. Season to Taste: Taste the curry and adjust the seasoning as needed, adding more salt to your preference. The longer the curry simmers, the more the flavors will meld and develop.
  7. Garnish and Serve: Sprinkle the chopped fresh cilantro over the top of the curry just before serving. This vibrant garnish will add a pop of color and a refreshing herbal note to balance the rich, earthy flavors.
