Chickpea Flatbread Recipe

Ingredients

• 2 cups (300g) cooked chickpeas (or 1 (15oz) can, drained and rinsed)
• 2 tablespoons olive oil
• 1 teaspoon baking powder
• 1/2 teaspoon salt
• 1/4 teaspoon garlic powder (optional)
• 2 tablespoons water (or more as needed)


Instructions

• Step 1: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
• Step 2: In a food processor, blend the cooked chickpeas, olive oil, baking powder, salt, and garlic powder (if using) until a smooth, thick batter forms. Add the water and blend again until the mixture is well combined and resembles a thick pancake batter.
• Step 3: Scoop the batter onto the prepared baking sheet and use your hands or a spatula to spread it into a thin, even layer, about 1/4-inch thick.
• Step 4: Bake for 12-15 minutes, or until the edges are golden brown and the center is cooked through.
• Step 5: Remove the flatbread from the oven and let it cool for a few minutes before slicing and serving.
