• 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
• 4 cups shredded green cabbage
• 1 red bell pepper, sliced
• 1 cup sliced mushrooms
• 2 tablespoons sesame oil
• 3 cloves garlic, minced
• 1 tablespoon grated fresh ginger
• 2 tablespoons low-sodium soy sauce
• 1 tablespoon rice vinegar
• 1 teaspoon sesame seeds (optional)
• Salt and black pepper to taste
Instructions
• Step 1: Heat the sesame oil in a large skillet or wok over medium-high heat. Add the chicken and cook, stirring occasionally, until the chicken is cooked through and lightly browned, about 5-7 minutes.
• Step 2: Add the garlic and ginger to the skillet and cook for 1 minute, stirring constantly, until fragrant.
• Step 3: Add the shredded cabbage, sliced bell pepper, and mushrooms to the skillet. Stir-fry the vegetables for 3-5 minutes, or until they are crisp-tender.
• Step 4: Pour in the soy sauce and rice vinegar, and season with salt and black pepper to taste. Toss the ingredients together until everything is well combined and heated through.
• Step 5: Sprinkle the sesame seeds over the top, if using, and serve immediately.
