Ingredients
• 2 pounds chicken wings, drumettes and flats separated
• 1 cup all-purpose flour
• 2 teaspoons cornstarch
• 1 teaspoon baking powder
• 1 teaspoon salt
• 1/2 teaspoon white pepper
• 1/4 cup soy sauce
• 2 tablespoons rice vinegar
• 2 tablespoons brown sugar
• 2 cloves garlic, minced
• 1 teaspoon sesame oil
• Vegetable oil for frying
Instructions
• Step 1: Pat the chicken wings dry with paper towels and place them in a large bowl. In a separate bowl, whisk together the flour, cornstarch, baking powder, salt, and white pepper.
• Step 2: Add the dry ingredients to the chicken wings and toss to evenly coat. Set aside.
• Step 3: In a small bowl, combine the soy sauce, rice vinegar, brown sugar, garlic, and sesame oil. Mix well and set aside.
• Step 4: In a large, heavy-bottomed pot or Dutch oven, heat 2-3 inches of vegetable oil to 350°F. Working in batches, carefully add the coated chicken wings to the hot oil and fry for 12-15 minutes, flipping occasionally, until golden brown and crispy.
• Step 5: Transfer the fried wings to a paper towel-lined plate to drain excess oil. Immediately toss the hot wings in the prepared soy sauce mixture until evenly coated.
• Step 6: Serve the Chinese Fried Chicken Wings warm, garnished with chopped scallions or sesame seeds if desired. Enjoy!
