Ingredients
• 2 pounds chicken wings, drumettes and wingettes separated
• 1/4 cup cornstarch
• 1 teaspoon ground ginger
• 1 teaspoon garlic powder
• 1 teaspoon Chinese five-spice powder
• 1/2 teaspoon salt
• 1/4 teaspoon white pepper
• Vegetable oil for frying
Instructions
• Step 1: Pat the chicken wings dry with paper towels and place them in a large bowl.
• Step 2: In a small bowl, whisk together the cornstarch, ginger, garlic powder, five-spice powder, salt, and white pepper. Sprinkle the seasoning mixture over the wings and toss to coat evenly.
• Step 3: Fill a large Dutch oven or heavy-bottomed pot with 2-3 inches of vegetable oil. Heat the oil to 350°F.
• Step 4: Working in batches, carefully add the coated wings to the hot oil and fry for 8-10 minutes, or until golden brown and crispy. Maintain the oil temperature between 325-350°F.
• Step 5: Transfer the fried wings to a paper towel-lined plate to drain excess oil. Serve hot, garnished with chopped scallions or sesame seeds, if desired.
