Ingredients
• 1 lb (450g) boneless, skinless chicken thighs, cut into 1-inch pieces
• 2 tablespoons olive oil
• 2 chipotle peppers in adobo sauce, finely chopped
• 2 cloves garlic, minced
• 1 teaspoon cumin
• 1 teaspoon smoked paprika
• 1/2 teaspoon dried oregano
• 1/4 teaspoon ground cinnamon
• 1/4 teaspoon cayenne pepper (optional, for extra heat)
• 1 tablespoon lime juice
• 1/2 teaspoon salt
• 1/4 teaspoon black pepper
Instructions
- Marinate the Chicken: In a large bowl, combine the chicken, olive oil, chopped chipotle peppers, garlic, cumin, smoked paprika, oregano, cinnamon, cayenne pepper (if using), lime juice, salt, and black pepper. Mix well to ensure the chicken is evenly coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours, to allow the flavors to meld.
- Preheat the Oven: Preheat your oven to 400°F (200°C).
- Arrange and Bake: Spread the marinated chicken in a single layer on a large, rimmed baking sheet. Make sure the pieces are not overcrowded, as this will prevent proper browning. Bake for 20-25 minutes, or until the chicken is cooked through and the edges are nicely charred.
- Broil (Optional): For an extra crispy and caramelized finish, switch your oven to the broil setting and broil the chicken for 2-3 minutes, keeping a close eye to prevent burning.
- Serve and Enjoy: Remove the chipotle chicken from the oven and serve immediately, garnished with your choice of toppings, such as chopped cilantro, diced avocado, or a squeeze of fresh lime juice. This dish pairs beautifully with rice, beans, or a fresh salad.
