Ingredients
• 3 cups fresh corn kernels, cut from about 5 ears of corn
• 2 chipotle peppers in adobo sauce, finely chopped
• 1 red onion, finely diced
• 2 cloves garlic, minced
• 1/4 cup fresh cilantro, chopped
• 2 tablespoons fresh lime juice
• 1 teaspoon sea salt
• 1/4 teaspoon freshly ground black pepper
Instructions
- Roast the Corn: Preheat your oven to 400°F (200°C). Spread the corn kernels on a baking sheet and roast for 15-20 minutes, stirring occasionally, until the corn is lightly charred and caramelized. This step adds a delightful depth of flavor to the salsa. Allow the corn to cool slightly before proceeding.
- Prepare the Chipotle Peppers: While the corn is roasting, finely chop the chipotle peppers. Be sure to remove any seeds if you prefer a milder heat level. The adobo sauce they’re packed in will add a wonderful smoky kick to the salsa.
- Combine the Ingredients: In a large mixing bowl, combine the roasted corn, chopped chipotle peppers, diced red onion, minced garlic, chopped cilantro, lime juice, salt, and black pepper. Gently stir the ingredients until they are evenly distributed and well-incorporated.
- Chill and Serve: Cover the salsa and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled, alongside your favorite tortilla chips or as a topping for grilled meats, tacos, or burrito bowls.
