Ingredients
• 1 pound ground beef
• 2 tablespoons olive oil
• 1 large onion, diced
• 3 cloves garlic, minced
• 2 tablespoons chipotle chili powder
• 1 teaspoon ground cumin
• 1 teaspoon dried oregano
• 1 teaspoon salt
• 1/2 teaspoon black pepper
• 1 (15 oz) can diced tomatoes
• 1 (4 oz) can diced green chiles
Instructions
• Step 1: In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Add the ground beef and cook, breaking it up with a wooden spoon, until browned and cooked through, about 5-7 minutes.
• Step 2: Add the diced onion and garlic to the skillet and continue cooking for 2-3 minutes, or until the onion is translucent and the garlic is fragrant.
• Step 3: Stir in the chipotle chili powder, cumin, oregano, salt, and black pepper. Cook for an additional minute to toast the spices and develop their flavors.
• Step 4: Pour in the diced tomatoes and green chiles, and stir to combine. Reduce the heat to low and let the mixture simmer for 10-15 minutes, allowing the flavors to meld and the sauce to thicken slightly.
• Step 5: Taste and adjust seasoning as needed, adding more salt, pepper, or chipotle chili powder to suit your preference.
