• 2 cups all-purpose flour
• 1 teaspoon baking soda
• 1/2 teaspoon baking powder
• 1/2 teaspoon salt
• 1 teaspoon ground cinnamon
• 1/2 cup unsalted butter, softened
• 3/4 cup granulated sugar
• 2 large eggs
• 1 teaspoon vanilla extract
• 2 cups grated zucchini (about 1 medium zucchini)
• 1 cup semi-sweet chocolate chips
Instructions
• Step 1: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick cooking spray and set it aside.
• Step 2: In a medium bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, and ground cinnamon. Set this dry ingredient mixture aside.
• Step 3: In a large bowl, cream the softened unsalted butter and granulated sugar together until light and fluffy, about 2-3 minutes. Beat in the eggs one at a time, then stir in the vanilla extract.
• Step 4: Fold in the grated zucchini until it’s evenly distributed throughout the batter. Then, gently fold in the dry ingredient mixture, being careful not to overmix.
• Step 5: Fold in the semi-sweet chocolate chips, reserving a handful to sprinkle on top of the loaf.
• Step 6: Pour the batter into the prepared loaf pan and spread it evenly. Sprinkle the reserved chocolate chips on top.
• Step 7: Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
