Ingredients
• 1 3/4 cups (220g) all-purpose flour
• 1 teaspoon baking soda
• 1/4 teaspoon salt
• 1/2 cup (113g) unsalted butter, softened
• 3/4 cup (150g) granulated sugar
• 2 large eggs
• 1 teaspoon vanilla extract
• 1 1/4 cups (300g) mashed ripe bananas (about 3 medium bananas)
• 1/4 cup (60ml) strong brewed coffee or espresso, cooled
• 1/2 cup (90g) semisweet chocolate chips
Instructions
• Step 1: Preheat your oven to 350°F (177°C). Grease a 9×5-inch loaf pan with butter or non-stick cooking spray.
• Step 2: In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
• Step 3: In a large bowl, beat the softened butter and sugar together until light and fluffy, about 2-3 minutes. Beat in the eggs one at a time, then stir in the vanilla extract.
• Step 4: Fold in the mashed bananas and cooled coffee or espresso until well combined. Gently fold in the dry ingredients just until no dry pockets remain, being careful not to overmix.
• Step 5: Fold in the chocolate chips, reserving a handful to sprinkle on top. Pour the batter into the prepared loaf pan and smooth the top. Sprinkle the remaining chocolate chips on top.
• Step 6: Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing and serving.
