30-Minute, Simple Chorizo Breakfast Burrito Recipe

Ingredients

• 1 lb (454g) hot or mild chorizo sausage, casings removed
• 8 large eggs, beaten
• 1/2 cup (120ml) whole milk
• 1/4 cup (60g) shredded cheddar cheese
• 1/4 cup (60g) shredded Monterey Jack cheese
• 2 tbsp (30ml) unsalted butter
• 1/4 cup (60g) diced white onion
• 2 tbsp (30ml) chopped fresh cilantro
• 1 lime, cut into wedges
• 6 large flour tortillas (or 8 medium-sized tortillas)


Instructions

  1. Cook the Chorizo: In a large skillet over medium-high heat, cook the chorizo sausage, breaking it up into small crumbles with a wooden spoon, until it’s cooked through and no longer pink, about 5-7 minutes. Transfer the cooked chorizo to a plate and set aside.
  2. Scramble the Eggs: In a medium bowl, whisk the eggs and milk together until well combined. Melt the butter in the same skillet used for the chorizo over medium heat. Pour in the egg mixture and scramble, stirring frequently, until the eggs are cooked through but still soft, about 3-4 minutes. Remove the scrambled eggs from the heat and set aside.
  3. Assemble the Burritos: Warm the tortillas according to package instructions. Divide the chorizo, scrambled eggs, cheddar and Monterey Jack cheeses, diced onions, and chopped cilantro evenly among the tortillas. Fold the bottom of each tortilla up, then fold in the sides and continue rolling to create a tight burrito.
  4. Serve and Enjoy: Serve the Chorizo Breakfast Burritos immediately, with a fresh lime wedge on the side for squeezing over the top. Enjoy your delicious, homemade breakfast masterpiece!
