• 3 cloves of garlic, minced
• 1 inch (2.5 cm) piece of fresh ginger, peeled and grated
• 1 teaspoon (5 ml) ground coriander
• 1/2 teaspoon (2.5 ml) ground cumin
• 1/4 teaspoon (1.25 ml) cayenne pepper (optional, for a spicy kick)
• Salt and freshly ground black pepper to taste
• Chopped fresh cilantro for garnish


Instructions

  1. Prepare the Ingredients: Gather all the ingredients and have them ready to go. Dice the onion, mince the garlic, grate the ginger, and cut the fish into 1-inch cubes. Measure out the coconut milk, broth, lime juice, and fish sauce.
  2. Sauté the Aromatics: In a large pot or Dutch oven, heat the coconut oil over medium heat. Add the diced onion and sauté for 3-4 minutes, until translucent. Then, add the minced garlic and grated ginger, and cook for an additional 1-2 minutes, stirring constantly, until fragrant.
  3. Build the Flavor Base: Pour in the coconut milk and broth, and stir to combine. Add the ground coriander, cumin, and cayenne (if using). Bring the mixture to a gentle simmer and let it cook for 5 minutes, allowing the flavors to meld.
  4. Add the Fish: Gently add the cubed fish to the simmering soup. Poach the fish for 5-7 minutes, or until it’s cooked through and flakes easily with a fork. Be careful not to overcook the fish, as it can become tough.
