Instructions
• Step 1: In a medium saucepan, combine the uncooked rice, coconut milk, whole milk, sugar, and salt. Bring the mixture to a simmer over medium heat, stirring occasionally.
• Step 2: Once the mixture reaches a simmer, reduce the heat to low and cook, stirring frequently, for 25-30 minutes or until the rice is tender and the pudding has thickened to your desired consistency.
• Step 3: Remove the pan from the heat and stir in the vanilla extract. Allow the pudding to cool slightly before serving.
