Ingredients
• 12 ounces fusilli or rotini pasta
• 1 cup cherry tomatoes, halved
• 1 cucumber, diced
• 1 red bell pepper, diced
• 1/2 red onion, thinly sliced
• 1/2 cup black olives, sliced
• 1/2 cup grated Parmesan cheese
• 1/4 cup fresh basil, chopped
• For the dressing:
• 1/2 cup olive oil
• 1/4 cup red wine vinegar
• 2 tablespoons Italian seasoning
• 2 cloves garlic, minced
• 1 teaspoon Dijon mustard
• 1/2 teaspoon salt
• 1/4 teaspoon black pepper
Instructions
• Step 1: Cook the pasta according to package instructions until al dente. Drain and rinse with cold water to cool completely.
• Step 2: In a large bowl, combine the cooked and cooled pasta, cherry tomatoes, cucumber, red bell pepper, red onion, black olives, Parmesan cheese, and chopped basil.
• Step 3: In a separate small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, garlic, Dijon mustard, salt, and black pepper to make the dressing.
• Step 4: Pour the dressing over the pasta salad and toss gently to coat evenly.
• Step 5: Cover and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled.
