Ingredients
• 1 pound elbow macaroni or small pasta shape
• 1 cup halved cherry tomatoes
• 1 cup diced cucumbers
• 1 cup diced bell peppers (mix of colors)
• 1/2 cup sliced black olives
• 1/4 cup thinly sliced red onion
• 1/4 cup grated Parmesan cheese (optional)
• 1/2 cup Italian dressing (homemade or store-bought)
Instructions
• Step 1: Cook the pasta according to package instructions. Drain and rinse under cold water until completely cooled.
• Step 2: In a large mixing bowl, combine the cooked and cooled pasta, cherry tomatoes, cucumbers, bell peppers, black olives, and red onion. Toss gently to mix.
• Step 3: Drizzle the Italian dressing over the pasta salad and toss to coat evenly. Sprinkle the Parmesan cheese on top, if desired.
• Step 4: Cover the bowl and refrigerate the pasta salad for at least 30 minutes to allow the flavors to meld.
• Step 5: Serve chilled and enjoy!
