• 1 sheet of puff pastry, thawed
• 1 cup crumbled feta cheese
• 1 cup fresh or frozen cranberries, chopped
• 2 tablespoons honey
• 1 tablespoon balsamic vinegar
• 1 teaspoon dried thyme
• 1/4 teaspoon salt
• 1/4 teaspoon black pepper
Instructions
• Step 1: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
• Step 2: In a medium bowl, combine the crumbled feta, chopped cranberries, honey, balsamic vinegar, dried thyme, salt, and black pepper. Mix well until everything is evenly distributed.
• Step 3: Unfold the thawed puff pastry sheet and roll it out into a 12×10-inch rectangle. Spread the cranberry-feta mixture evenly over the puff pastry, leaving a 1-inch border on all sides.
• Step 4: Starting from the long side, tightly roll up the puff pastry like a jelly roll. Pinch the seam to seal it.
• Step 5: Slice the rolled puff pastry into 1-inch thick pinwheels and place them cut-side up on the prepared baking sheet, spacing them about 1 inch apart.
• Step 6: Bake the pinwheels for 18-20 minutes, or until the puff pastry is golden brown and flaky.
• Step 7: Remove the pinwheels from the oven and let them cool for 5 minutes before serving.
