Creamy Cajun Chicken Pasta

Ingredients

• 1 lb. boneless, skinless chicken breasts, cut into bite-sized pieces
• 2 tablespoons Cajun seasoning
• 8 oz. penne pasta
• 2 tablespoons olive oil
• 1 large onion, diced
• 3 cloves garlic, minced
• 1 cup heavy cream
• 1 cup low-sodium chicken broth
• 1 teaspoon dried thyme
• 1/2 teaspoon smoked paprika
• Salt and black pepper, to taste
• Chopped fresh parsley, for garnish


Instructions

• Step 1: Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
• Step 2: In a large skillet, heat the olive oil over medium-high heat. Add the diced chicken and Cajun seasoning. Cook for 5-7 minutes, or until the chicken is cooked through and lightly browned.
• Step 3: Reduce the heat to medium and add the diced onion to the skillet. Cook for 3-4 minutes, stirring occasionally, until the onion is translucent.
• Step 4: Add the minced garlic to the skillet and cook for an additional minute, stirring constantly, until fragrant.
• Step 5: Pour in the heavy cream and chicken broth. Stir in the dried thyme and smoked paprika. Season with salt and black pepper to taste.
• Step 6: Bring the sauce to a simmer and cook for 5-7 minutes, or until the sauce has thickened slightly.
• Step 7: Add the cooked penne pasta to the skillet and toss to coat the pasta evenly in the creamy Cajun sauce.
