Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Sauté the Vegetables: In a large, oven-safe pot or Dutch oven, heat a tablespoon of olive oil over medium heat. Add the diced onion, carrots, and celery, and sauté for 5-7 minutes, or until the vegetables are softened and the onions are translucent. Add the minced garlic and cook for an additional minute, stirring constantly to prevent the garlic from burning.
- Brown the Chicken: Add the cubed chicken to the pot and cook for 4-5 minutes, or until the chicken is lightly browned on the outside. This step helps to lock in the juices and prevent the chicken from becoming dry.
- Make the Creamy Sauce: Sprinkle the all-purpose flour over the chicken and vegetables, and stir to coat everything evenly. Cook for 1-2 minutes, allowing the flour to toast slightly. Gradually pour in the chicken broth, stirring constantly to prevent lumps from forming. Once the broth is incorporated, stir in the heavy cream. Bring the mixture to a simmer and let it thicken, about 3-5 minutes.
- Add the Gnocchi: Gently fold the uncooked gnocchi into the creamy chicken mixture. Make sure the gnocchi is fully submerged in the sauce.
- Bake to Perfection: Transfer the pot to the preheated oven and bake for 20-25 minutes, or until the gnocchi is tender and the sauce is bubbly and thickened. Keep a close eye on the dish to ensure the gnocchi doesn’t overcook and become gummy.
- Finish with Herbs: Remove the pot from the oven and stir in the dried thyme and parsley. Season with salt and black pepper to taste.
