Crockpot Hungarian Goulash

Ingredients

• 2 pounds beef chuck roast, cut into 1-inch cubes
• 1 large onion, diced
• 3 cloves garlic, minced
• 2 tablespoons paprika
• 1 teaspoon caraway seeds
• 1 teaspoon salt
• 1/2 teaspoon black pepper
• 1 cup beef broth
• 1 (15 oz) can diced tomatoes
• 2 tablespoons tomato paste
• 1 bay leaf


Instructions

• Step 1: In a large skillet, brown the beef cubes over medium-high heat until lightly seared on all sides, about 5 minutes. Transfer the beef to a crockpot.
• Step 2: In the same skillet, sauté the onions and garlic until fragrant and translucent, about 3-4 minutes. Add the paprika, caraway seeds, salt, and pepper, and cook for an additional minute, stirring constantly.
• Step 3: Pour the onion mixture into the crockpot with the beef. Add the beef broth, diced tomatoes, tomato paste, and bay leaf. Stir to combine.
• Step 4: Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is very tender.
• Step 5: Remove the bay leaf before serving. Taste and adjust seasoning as needed.
