Ingredients
• 3 medium cucumbers, peeled and sliced
• 2 cups cherry tomatoes, halved
• 1/2 red onion, thinly sliced
• 1/4 cup fresh parsley, chopped
• 2 tablespoons olive oil
• 2 tablespoons red wine vinegar
• 1 tablespoon lemon juice
• 1 teaspoon Dijon mustard
• 1/2 teaspoon dried oregano
• Salt and pepper to taste
Instructions
• Step 1: Peel and slice the cucumbers into rounds or half-moons. Place them in a large bowl.
• Step 2: Add the halved cherry tomatoes and thinly sliced red onion to the bowl with the cucumbers.
• Step 3: In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, Dijon mustard, dried oregano, salt, and pepper. Pour the dressing over the cucumber and tomato mixture, and gently toss to combine.
• Step 4: Sprinkle the chopped fresh parsley over the top of the salad and toss again to evenly distribute the herbs.
• Step 5: Refrigerate the salad for at least 30 minutes to allow the flavors to meld. Serve chilled.
