Ingredients
• 1 pound ground pork or beef
• 1 cup long-grain white rice
• 1 large onion, diced
• 1 green bell pepper, diced
• 2 celery stalks, diced
• 3 cloves garlic, minced
• 1 tablespoon Cajun seasoning
• 1 teaspoon dried thyme
• 1/2 teaspoon cayenne pepper
• 1/2 teaspoon smoked paprika
• 2 cups chicken or beef broth
• 2 tablespoons chopped fresh parsley
• Salt and black pepper to taste
Instructions
• Step 1: In a large skillet or Dutch oven, cook the ground pork or beef over medium-high heat, breaking it up with a wooden spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
• Step 2: Add the onion, bell pepper, and celery to the skillet. Sauté for 5-7 minutes, or until the vegetables are softened and the onion is translucent.
• Step 3: Stir in the garlic and cook for an additional minute, until fragrant.
• Step 4: Add the rice, Cajun seasoning, thyme, cayenne pepper, and smoked paprika. Stir to coat the rice with the spices and ensure even distribution.
• Step 5: Pour in the chicken or beef broth and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and has absorbed the liquid.
• Step 6: Remove the skillet from heat and let the dirty rice stand, covered, for 5 minutes. Fluff the rice with a fork and stir in the chopped parsley.
• Step 7: Season with salt and black pepper to taste.
