Instructions

  1. Prepare the Chickpeas: Drain and rinse the chickpeas, then pat them dry with paper towels. This step ensures that the chickpeas are as dry as possible, which will help them crisp up during frying.
  2. Chop the Herbs and Aromatics: Finely chop the parsley, cilantro, onion, and garlic. The key is to chop them as finely as possible to ensure an even distribution of flavor throughout the falafel.
  3. Combine the Ingredients: In a large bowl, combine the drained chickpeas, chopped herbs and aromatics, cumin, coriander, baking soda, cayenne, and salt. Use a potato masher or the back of a fork to lightly mash the chickpeas, leaving some texture. Gradually add the flour, 1 tablespoon at a time, until the mixture holds together without being too dry or too sticky.
  4. Form the Falafel: Using a small ice cream scoop or your hands, form the chickpea mixture into small, round balls, about 1-inch in diameter. Gently flatten each ball into a disk shape.
  5. Fry the Falafel: Heat 1-2 inches of vegetable oil in a large, heavy-bottomed pan or Dutch oven to 350°F (175°C). Working in batches, carefully lower the falafel discs into the hot oil and fry for 2-3 minutes per side, or until golden brown and crispy. Use a slotted spoon to transfer the fried falafel to a paper towel-lined plate.
