Ingredients

• 1 sheet (approximately 8 ounces) puff pastry, thawed
• 8 ounces fresh or dried figs, chopped
• 4 ounces goat cheese, softened
• 2 tablespoons honey
• 1 teaspoon lemon zest
• 1/4 teaspoon ground cinnamon
• 1 egg, beaten with 1 tablespoon water, for egg wash


Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Prepare the Filling: In a small bowl, combine the chopped figs, goat cheese, honey, lemon zest, and cinnamon. Mix until well incorporated.
  3. Roll Out the Pastry: Unfold the puff pastry sheet and roll it out on a lightly floured surface into a 12-inch square. Spread the fig and goat cheese mixture evenly over the pastry, leaving a 1-inch border on all sides.
  4. Roll and Cut the Pinwheels: Starting from one side, tightly roll the pastry into a log. Gently press the seam to seal. Using a sharp knife, cut the log into 12 equal slices, approximately 1-inch thick.
  5. Arrange and Bake: Place the pinwheel slices, cut-side up, on the prepared baking sheet, spacing them about 2 inches apart. Brush the tops with the egg wash. Bake for 18-22 minutes, or until the pastry is golden brown and flaky.
  6. Cool and Serve: Remove the pinwheels from the oven and let them cool on the baking sheet for 5 minutes before transferring to a serving platter. Serve warm or at room temperature.
