Ingredients

• 8 oz (225g) thin rice noodles or pancit noodles
• 1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

• 2 tablespoons vegetable oil
• 1 onion, thinly sliced
• 3 cloves garlic, minced
• 1 cup (150g) shredded cabbage
• 1 cup (150g) julienned carrots
• 2 tablespoons soy sauce
• 1 tablespoon oyster sauce
• 1 teaspoon fish sauce
• 1/2 teaspoon ground black pepper
• 2 green onions, thinly sliced
• 1/4 cup (30g) fried garlic bits (optional, for garnish)


Instructions

  1. Soak the Noodles: Place the rice noodles in a large bowl and cover with hot water. Let them soak for 15-20 minutes, or until the noodles are pliable and softened. Drain the noodles and set them aside.
  2. Cook the Proteins: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the chicken and shrimp, and cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through and the shrimp are pink and opaque. Remove the proteins from the pan and set them aside.
  3. Sauté the Vegetables: In the same pan, add the onions and garlic, and sauté for 2-3 minutes, or until fragrant and translucent. Add the cabbage and carrots, and continue cooking for an additional 3-5 minutes, or until the vegetables are tender-crisp.
  4. Combine the Noodles and Proteins: Add the drained noodles, cooked chicken, and shrimp back to the pan. Pour in the soy sauce, oyster sauce, fish sauce, and black pepper. Toss everything together gently with tongs or chopsticks, ensuring the noodles are evenly coated and the ingredients are well combined.
