Ingredients
• 2 lbs beef chuck roast, cut into 1-inch cubes
• 4 large yellow onions, thinly sliced
• 4 cloves garlic, minced
• 2 tablespoons unsalted butter
• 2 tablespoons olive oil
• 2 cups beef broth
• 1 cup dry white wine
• 2 sprigs fresh thyme
• 1 bay leaf
• 8 oz egg noodles
• Salt and freshly ground black pepper, to taste
Instructions
- Sear the Beef: Pat the beef cubes dry with paper towels and season them generously with salt and pepper. Heat 1 tablespoon of olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat. Working in batches if necessary, sear the beef on all sides until a nice brown crust forms, about 2-3 minutes per side. Transfer the seared beef to a plate and set aside.
- Caramelize the Onions: Reduce the heat to medium-low and add the remaining 1 tablespoon of olive oil and the butter to the pot. Add the sliced onions and cook, stirring occasionally, until they are deeply caramelized, about 30-40 minutes. The onions should reach a rich, golden-brown color and have a sweet, almost jam-like texture.
- Deglaze the Pot: Once the onions are caramelized, add the garlic and cook for 1 minute, stirring constantly, until fragrant. Deglaze the pot by pouring in the white wine and using a wooden spoon to scrape up any browned bits from the bottom of the pot. Allow the wine to simmer and reduce by half, about 2-3 minutes.
- Braise the Beef: Return the seared beef and any accumulated juices to the pot. Add the beef broth, thyme, and bay leaf. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 1.5-2 hours, or until the beef is very tender and easily shreds with a fork.
- Cook the Noodles: About 15 minutes before the beef is done, bring a large pot of salted water to a boil. Add the egg noodles and cook according to the package instructions, usually 7-9 minutes, until al dente. Drain the noodles and set aside.
- Assemble and Serve: Remove the thyme sprigs and bay leaf from the beef mixture. Use two forks to shred the beef directly in the pot. Add the cooked egg noodles and gently toss to combine. Taste and adjust seasoning with salt and pepper as needed. Serve hot, garnished with fresh thyme or parsley, if desired.
