• 4 boneless, skinless chicken breasts
• 1 cup all-purpose flour
• 1 teaspoon paprika
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• 1 teaspoon salt
• 1/2 teaspoon black pepper
• 2 large eggs, beaten
• 2 cups panko breadcrumbs
• Vegetable oil for frying
• 4 brioche or potato buns, split in half
• Toppings of your choice (e.g., lettuce, tomato, pickles, mayo, etc.)
Instructions
• Step 1: In a shallow bowl, whisk together the flour, paprika, garlic powder, onion powder, salt, and pepper. Set aside.
• Step 2: In a separate shallow bowl, beat the eggs. In a third shallow bowl, place the panko breadcrumbs.
• Step 3: Working one at a time, dredge the chicken breasts in the flour mixture, dip them in the beaten egg, and then coat them in the panko breadcrumbs, pressing gently to adhere.
• Step 4: In a large skillet or Dutch oven, heat 1-2 inches of vegetable oil to 350°F. Fry the breaded chicken breasts in batches for 3-4 minutes per side, or until golden brown and cooked through. Drain on a paper towel-lined plate.
• Step 5: Toast the buns until lightly golden. Place a fried chicken breast on the bottom bun, then top with your desired toppings and the top bun.
