Ingredients
• 1 fresh pineapple, peeled, cored, and cut into 1/2-inch thick rings
• 1 cup all-purpose flour
• 1 teaspoon baking powder
• 1/2 teaspoon salt
• 1 cup coconut milk
• Vegetable oil for frying
• Powdered sugar for dusting
Instructions
• Step 1: In a medium bowl, whisk together the flour, baking powder, and salt. Gradually add the coconut milk, stirring until a smooth batter forms.
• Step 2: In a large skillet or Dutch oven, heat about 2 inches of vegetable oil to 350°F. Dip the pineapple rings into the batter, ensuring they are evenly coated on both sides.
• Step 3: Carefully add the battered pineapple rings to the hot oil and fry for 2-3 minutes per side, or until golden brown and crispy. Transfer the fried rings to a paper towel-lined plate to drain any excess oil.
• Step 4: Dust the warm fried pina colada rings with powdered sugar and serve immediately.
