Ingredients
• 1 (15 oz) can corn, drained
• 1 (15 oz) can black beans, drained and rinsed
• 1 cup shredded cheddar cheese
• 1 cup Fritos corn chips, crushed
• 1/2 cup Catalina dressing
• 1/4 cup diced red onion
• 2 tablespoons chopped fresh cilantro (optional)
Instructions
• Step 1: In a large bowl, combine the drained corn, drained and rinsed black beans, shredded cheddar cheese, and crushed Fritos corn chips.
• Step 2: Add the Catalina dressing and diced red onion, then gently mix until all the ingredients are evenly coated.
• Step 3: If desired, stir in the chopped fresh cilantro for an extra burst of flavor.
• Step 4: Chill the Frito Corn Salad in the refrigerator for at least 30 minutes to allow the flavors to meld together.
