Ingredients
• 2 cups plain Greek yogurt
• 1/4 cup honey (or maple syrup for a vegan option)
• 1 teaspoon vanilla extract
• 1 cup fresh or frozen berries (such as strawberries, blueberries, or raspberries)
• Optional toppings: chopped nuts, shredded coconut, granola, mini chocolate chips
Instructions
• Step 1: In a medium bowl, mix together the Greek yogurt, honey (or maple syrup), and vanilla extract until well combined.
• Step 2: Gently fold in the berries, taking care not to break them down too much.
• Step 3: Using a spoon or small cookie scoop, portion the yogurt mixture into a silicone mold or onto a parchment-lined baking sheet, creating small bite-sized portions.
• Step 4: Sprinkle the desired toppings (such as chopped nuts, shredded coconut, granola, or mini chocolate chips) over the yogurt bites.
• Step 5: Freeze the yogurt bites for at least 2 hours, or until completely set.
• Step 6: Once frozen, gently remove the bites from the mold or parchment paper and transfer them to an airtight container or resealable bag. Store in the freezer for up to 3 months.
