Ingredients
• 3 pounds Yukon Gold potatoes, peeled and cut into 1-inch cubes
• 6 slices bacon, diced
• 1 large onion, diced
• 3 cloves garlic, minced
• 1/2 cup apple cider vinegar
• 1/4 cup water
• 2 tablespoons granulated sugar
• 1 teaspoon salt
• 1/2 teaspoon black pepper
• 2 tablespoons chopped fresh parsley (optional)
Instructions
• Step 1: Place the cubed potatoes in a large pot and cover with cold water. Bring to a boil over high heat, then reduce heat and simmer for 10-12 minutes, or until the potatoes are fork-tender. Drain and set aside to cool slightly.
• Step 2: In a large skillet, cook the diced bacon over medium heat until crispy, about 8-10 minutes. Remove the bacon from the pan, reserving 2 tablespoons of the bacon grease.
• Step 3: Add the diced onion to the bacon grease and sauté for 5-7 minutes, until translucent. Add the minced garlic and cook for an additional minute, until fragrant.
• Step 4: In a small bowl, whisk together the apple cider vinegar, water, sugar, salt, and black pepper. Pour the dressing over the warm potatoes and gently toss to combine.
• Step 5: Fold in the cooked bacon and chopped parsley (if using). Serve warm or at room temperature.
