Ingredients
• 1 cup uncooked orzo pasta
• 1 cup halved cherry tomatoes
• 1 cup diced cucumber
• 1/2 cup crumbled feta cheese
• 1/4 cup sliced kalamata olives
• 1/4 cup diced red onion
• 2 tablespoons chopped fresh parsley
• 2 tablespoons olive oil
• 2 tablespoons lemon juice
• 1 teaspoon dried oregano
• 1/2 teaspoon salt
• 1/4 teaspoon black pepper
Instructions
• Step 1: Cook the orzo according to package instructions. Drain and rinse under cold water to cool completely.
• Step 2: In a large bowl, combine the cooked and cooled orzo, halved cherry tomatoes, diced cucumber, crumbled feta cheese, sliced kalamata olives, and diced red onion.
• Step 3: In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and black pepper. Pour the dressing over the orzo salad and toss gently to coat.
• Step 4: Garnish the salad with chopped fresh parsley and serve chilled or at room temperature.
