Ingredients
• 1 pound (454g) rotini or penne pasta
• 1 cup (150g) cherry tomatoes, halved
• 1 medium cucumber, diced
• 1 red onion, thinly sliced
• 1 cup (150g) pitted kalamata olives, halved
• 1 cup (150g) crumbled feta cheese
• 2 tablespoons chopped fresh parsley
• 2 tablespoons chopped fresh oregano
• For the dressing:
• 1/4 cup (60ml) olive oil
• 2 tablespoons red wine vinegar
• 1 tablespoon lemon juice
• 2 cloves garlic, minced
• 1 teaspoon Dijon mustard
• 1/2 teaspoon dried oregano
• 1/4 teaspoon salt
• 1/4 teaspoon black pepper
Instructions
• Step 1: Cook the pasta according to package instructions until al dente. Drain and rinse with cold water to cool completely.
• Step 2: In a large bowl, combine the cooked and cooled pasta, cherry tomatoes, cucumber, red onion, kalamata olives, feta cheese, parsley, and oregano.
• Step 3: In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, garlic, Dijon mustard, dried oregano, salt, and black pepper to make the dressing.
• Step 4: Pour the dressing over the pasta salad and toss gently to coat all the ingredients evenly.
• Step 5: Cover and refrigerate the Greek pasta salad for at least 30 minutes to allow the flavors to meld together.
• Step 6: Serve chilled or at room temperature, and enjoy!
