• 1 (15-ounce) can chickpeas, drained and rinsed
• 1 cucumber, diced
• 1 pint cherry tomatoes, halved

• 1 cup crumbled feta cheese
• 1/4 cup chopped fresh parsley
• 2 tablespoons olive oil
• 2 tablespoons lemon juice
• 1 teaspoon dried oregano
• 1/4 teaspoon salt
• 1/4 teaspoon black pepper
Instructions
• Step 1: In a large bowl, combine the drained and rinsed chickpeas, diced cucumber, halved cherry tomatoes, and thinly sliced red onion.
• Step 2: In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and black pepper to make the dressing.
• Step 3: Pour the dressing over the salad and toss gently to coat all the ingredients.
• Step 4: Sprinkle the crumbled feta cheese and chopped fresh parsley over the top of the salad.
