Ingredients
• 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
• 1 cup fresh pineapple chunks
• 1 red bell pepper, cut into 1-inch pieces
• 1 green bell pepper, cut into 1-inch pieces
• 1 red onion, cut into 1-inch pieces
• 1/2 cup teriyaki sauce
• 2 tablespoons honey
• 1 tablespoon sesame oil
• 2 cloves garlic, minced
• 1 teaspoon ground ginger
• Salt and black pepper to taste
Instructions
• Step 1: In a large bowl, whisk together the teriyaki sauce, honey, sesame oil, garlic, and ginger. Add the chicken cubes and toss to coat. Cover and marinate in the refrigerator for 30 minutes to 1 hour.
• Step 2: Preheat your grill to medium-high heat. Thread the marinated chicken, pineapple chunks, bell pepper pieces, and onion onto skewers, alternating the ingredients.
• Step 3: Grill the kabobs for 12-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender.
• Step 4: Remove the kabobs from the grill and let them rest for a few minutes. Serve hot, garnished with additional fresh pineapple or chopped green onions, if desired.
