Hibachi-Style Chicken on a Blackstone Griddle

Ingredients

• 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
• 2 tablespoons soy sauce
• 1 tablespoon rice vinegar
• 2 teaspoons sesame oil
• 2 teaspoons brown sugar
• 3 cloves garlic, minced
• 1 tablespoon grated fresh ginger
• 1 tablespoon vegetable oil, for cooking
• Salt and black pepper, to taste


Instructions

• Step 1: In a large bowl, combine the cubed chicken, soy sauce, rice vinegar, sesame oil, brown sugar, garlic, and ginger. Toss to coat the chicken evenly. Cover and marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
• Step 2: Preheat your Blackstone griddle to high heat. Once the griddle is hot, drizzle the vegetable oil over the surface.
• Step 3: Working in batches if necessary, add the marinated chicken to the hot griddle in a single layer. Cook for 2-3 minutes per side, or until the chicken is nicely charred and cooked through.
• Step 4: Transfer the cooked chicken to a serving plate. Season with salt and pepper to taste.
• Step 5: Serve the hibachi-style chicken immediately, accompanied by your favorite hibachi sides like fried rice, sautéed vegetables, and yum yum sauce.
