Instructions
• Step 1: Preheat your oven to 400°F (200°C). In a small bowl, combine the honey, chipotle chili powder, smoked paprika, garlic powder, and salt. Mix well to create the glaze.
• Step 2: Place the chicken breasts in a baking dish and brush them evenly with the honey-chipotle glaze, making sure to coat all sides.
• Step 3: Bake the chicken for 25-30 minutes, or until it reaches an internal temperature of 165°F (75°C). Allow the chicken to rest for 5 minutes before slicing or shredding it.
• Step 4: In a large bowl, combine the cooked brown rice, diced bell peppers, and diced red onion. Toss to mix well.
• Step 5: To assemble the rice bowls, divide the rice mixture evenly among serving bowls. Top each bowl with sliced or shredded honey chipotle chicken, avocado slices, and a sprinkle of chopped cilantro.
