• 2 pounds boneless, skinless chicken breasts
• 1/2 cup honey mustard dressing
• 1 head romaine lettuce, chopped
• 1 cup cherry tomatoes, halved
• 1 cucumber, diced
• 1/2 red onion, thinly sliced
• 1/2 cup shredded cheddar cheese
• 1/4 cup crumbled bacon (optional)
Instructions
• Step 1: Preheat your oven to 400°F (200°C). Season the chicken breasts with salt and pepper, then place them on a baking sheet lined with parchment paper. Bake for 20-25 minutes, or until the chicken is cooked through and no longer pink in the center.
• Step 2: Once the chicken is cool enough to handle, shred or dice it into bite-sized pieces.
• Step 3: In a large salad bowl, combine the chopped romaine lettuce, cherry tomatoes, diced cucumber, and sliced red onion.
• Step 4: Add the shredded chicken to the salad bowl and drizzle the honey mustard dressing over the top. Toss gently to coat all the ingredients.
• Step 5: Sprinkle the shredded cheddar cheese and crumbled bacon (if using) over the salad.
