• 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

Instructions
• Step 1: In a small bowl, whisk together the honey, soy sauce, rice vinegar, and cornstarch. Set aside.
• Step 2: Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes, stirring occasionally, until the chicken is lightly browned on all sides.
• Step 3: Add the garlic to the skillet and cook for 1 minute, until fragrant.
• Step 4: Pour the honey-soy sauce mixture into the skillet and stir to coat the chicken. Bring the sauce to a simmer and cook for 2-3 minutes, until the sauce has thickened slightly.
• Step 5: Add the chopped walnuts to the skillet and stir to combine. Cook for an additional 2-3 minutes, until the walnuts are lightly toasted and the sauce has a glossy, caramelized appearance.
• Step 6: Season with salt and pepper to taste.
• Step 7: Serve the honey walnut chicken immediately, garnished with extra chopped walnuts if desired. Enjoy!
