Ingredients
• 2 cups mixed dried fruit (such as cranberries, apricots, and figs), chopped
• 1 cup chopped walnuts or pecans
• 1 cup sweetened condensed milk
• 1 (8 oz) package cream cheese, softened
• 1 teaspoon vanilla extract
• 1/2 teaspoon ground cinnamon
• 1/4 teaspoon ground nutmeg
• 1/4 teaspoon ground cloves
Instructions
• Step 1: In a large bowl, combine the chopped dried fruit and nuts. Pour the sweetened condensed milk over the mixture and stir until well coated.
• Step 2: In a separate bowl, beat the cream cheese with the vanilla, cinnamon, nutmeg, and cloves until smooth and creamy.
• Step 3: Grease a 9-inch springform pan or a loaf pan. Press the fruit and nut mixture into the prepared pan, packing it down firmly.
• Step 4: Spread the cream cheese mixture evenly over the top of the fruit and nut layer. Cover the pan with plastic wrap and refrigerate for at least 8 hours or up to 3 days.
• Step 5: When ready to serve, remove the springform ring or loaf pan and slice the icebox fruit cake into desired portions. Garnish with additional dried fruit or nuts, if desired.
