Ingredients
• 3 lbs (1.5 kg) ripe tomatoes, diced
• 1 cup (24 g) fresh basil leaves, chiffonade
• 3 cloves garlic, minced
• 1/4 cup (60 ml) high-quality extra-virgin olive oil
• 2 tbsp (30 ml) balsamic vinegar
• 1 tsp (5 g) sea salt
• 1/4 tsp (1.25 g) freshly ground black pepper
Instructions
- Prep the Tomatoes: Gently wash the tomatoes and pat them dry with a clean kitchen towel. Dice the tomatoes into bite-sized pieces, being careful to retain as much of the juice as possible.
- Assemble the Salad: In a large bowl, combine the diced tomatoes, basil leaves, and minced garlic. Drizzle the olive oil and balsamic vinegar over the top, then season with salt and pepper. Gently toss the ingredients together until evenly coated.
- Chill and Serve: Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld. When ready to serve, give the salad a gentle toss and transfer it to a serving bowl or platter. Enjoy immediately, garnished with additional basil leaves if desired.
