Instructions
- Prepare the Dough: In a large mixing bowl, combine the all-purpose flour, whole wheat flour, sugar, salt, and baking powder. Whisk the dry ingredients together to ensure even distribution. In a separate bowl, whisk together the coconut milk, water, and melted butter. Slowly pour the wet ingredients into the dry ingredients, and use a wooden spoon or your hands to gently mix until a shaggy dough forms.
- Knead the Dough: Turn the dough out onto a lightly floured surface and knead for about 5-7 minutes, until the dough becomes smooth and elastic. Be careful not to overwork the dough, as this can result in a tough texture.
- First Rise: Place the dough in a lightly greased bowl, cover it with a damp towel or plastic wrap, and let it rise in a warm, draft-free place for about 1 hour, or until it has doubled in size.
