• 1/2 cup (120ml) water
• 1/4 cup (57g) unsalted butter, melted
• 1 egg, beaten


Instructions

  1. Prepare the Dough: In a large mixing bowl, combine the all-purpose flour, whole wheat flour, sugar, salt, and baking powder. Whisk the dry ingredients together to ensure even distribution. In a separate bowl, whisk together the coconut milk, water, and melted butter. Slowly pour the wet ingredients into the dry ingredients, and use a wooden spoon or your hands to gently mix until a shaggy dough forms.
  2. Knead the Dough: Turn the dough out onto a lightly floured surface and knead for about 5-7 minutes, until the dough becomes smooth and elastic. Be careful not to overwork the dough, as this can result in a tough texture.
  3. First Rise: Place the dough in a lightly greased bowl, cover it with a damp towel or plastic wrap, and let it rise in a warm, draft-free place for about 1 hour, or until it has doubled in size.
  4. Shape the Loaf: Punch down the dough to release any air bubbles, then divide it into two equal pieces. Roll each piece into a ball, then use a rolling pin to flatten each ball into an oval shape, about 1/2 inch thick.
  5. Second Rise: Place the shaped loaves on a parchment-lined baking sheet, cover them with a damp towel, and let them rise for an additional 30 minutes.
  6. Bake the Coco Bread: Preheat your oven to 375°F (190°C). Brush the tops of the loaves with the beaten egg, then bake for 20-25 minutes, or until the crust is golden brown and the internal temperature reaches 205°F (96°C).
